So here at the first lot of autumn vegies that are not tomatoes (of which we have been getting copious amounts, seriously, its been a tomato invasion), I do love the colour of beetroot - don't eat it myself but I think it has the most luscious colour. I am going to pickle them as my stepdad likes them pickled and he will be the only one eating them!
Oh they look awesome....I love beets, but my husband doesn't like the smell of them cooking or pickled!! (he got sick by eating too much beetroot when he was younger and now can't stand them) - so I don't grow them :o(
